Easter is just about here, which means that you probably will probably have plenty of (beautiful!) hard-boiled eggs that you need to use up. Of course, you can always peel and eat plain for a high-protein afternoon snack. But if you just have too many to eat up, you might be interested in some of these simple hard-boiled egg recipes that I’ve put together for you today.

How to Make Hard-Boiled Eggs

The easiest way to make hard-boiled eggs is to place the eggs in boiling water in a large saucepan on your stovetop for about 10 minutes. (Do not drop them in until the water has come to a full rolling boil.) Once they’ve finished being in the boiling water for that amount of time, you can remove them and place them in a large bowl of ice water to cool them down quickly and help them set up.

You can also make hard-boiled eggs in your Instant Pot or Pressure Cooker. Just put the eggs in a steamer basket or on a tray in the cooker, along with 1 cup of water. Cook on high pressure for 3-5 minutes of cooking time (depending on how done you like the yolks to be) and let the cooker do a natural release for another 5 minutes of time before you release the pressure and open the cooker.

Either one of these methods will give you the perfect hard-boiled egg! I’ve heard of adding baking soda, vinegar, and other things to the water when boiling eggs, but none of these tips have ever worked for me. Fresh eggs are simply hard to peel!

1. Deviled Eggs

The first idea that comes to mind, of course, is a delicious Deviled Egg. These little treats are so easy to put together and can be made up quickly when you already have the eggs hard-boiled. I’ve got a yummy recipe here for Chive Infused Hard Boiled Eggs using chives.

We like our deviled eggs made traditionally with mustard and mayo and a sprinkle of paprika on top.

2. Egg Salad

Egg Salad is a very easy way to use up lots of hard-boiled eggs at once. You can make it as a side dish or it also makes a great egg salad sandwiches filling. Here’s a Simple Egg Salad Recipe to make. We make egg salad many times a month and serve it in Pita Pockets.

You could also add shredded chicken to your egg salad to make it more of a chicken salad if you prefer.

3. Salad Topping

Hard-boiled eggs make a wonderful salad topping! Peel and dice up into small pieces and sprinkle on top of your salad with shredded cheese. This homemade Russian Salad Dressing Recipe makes a wonderful dressing for salads topped with eggs. Of course, you can use the hard-boiled eggs to top a traditional Cobb Salad as well.

4. Egg Salad Lettuce Cups

If you are gluten-free or would rather not have the heaviness of a breaded sandwich, you can make egg salad lettuce cups!

You can either make a basic egg salad with your hard-boiled eggs like the one above, or you can peel and chop the eggs, toss them with a bit of cooked shredded chicken (or tuna) and shredded parmesan cheese, and place them in a romaine lettuce leaf like a boat. Yum!

5. Pasta Salad

Make a delicious pasta salad with them! Peel and chop the hard-boiled eggs and toss in a large bowl with cooked pasta (a shell or spiral-type pasta works well), diced cherry tomatoes, a sprinkle of crumbled feta cheese, and cooked crumbled bacon. Drizzle with a bit of Ranch Dressing and salt and pepper to taste.

Celery, green onions, or other vegetables might make great additions to the salad as well!

6. Pickled Eggs

Want to make something a little different? How about Pickled Eggs? Pickled Eggs can be a great way to use up a larger amount of hard-boiled eggs, and even though they are stored in the fridge, you won’t have to eat them all right away.

7. Pimento Cheese Stuffed Eggs

Want to make something like deviled eggs but with different ingredients and a whole new flavor profile? How about Pimento Cheese Stuffed Eggs? Slice your eggs as you would for any deviled egg recipe, but mix the yolks with some Pimento Cheese. Stuff your eggs with the mixture, and you have a wonderfully different new appetizer!

8. Potato Salad

Sprinkle the Potato Salad with a bit of fresh dill to liven it up during the spring and summer.

9. Egg Salad BLT

Want to make Egg Salad an entire meal? Try an Egg Salad BLT! Place Egg Salad, freshly cooked bacon, sliced tomatoes, and crisp lettuce, all sandwiched between two pieces of your favorite bread.

10. Hard Boiled Egg Quesadilla

One more delicious little meal idea: make a hard-boiled egg quesadilla! Place some peeled, chopped, hard-boiled eggs on a flour tortilla with a sprinkle of cheddar cheese. Top with a second tortilla and fry in a bit of butter in a frying pan or on a griddle until the cheese is melted, flip and fry the other side to golden perfection and enjoy!
